dinner 32

strawberries have gone and only a week or two left for local peaches and blueberries... now we start to see figs and melon file in. it's a short window for these seasonal fruits to come together for a nice light salad, so we put together a local fruit salad.
goat farm figs, blueberries, iowa prosciutto, parmesan cheese, basil and lemon vinaigrette.
we offered an amuse bouche of this sandwich a while back, and it was so good that we decided to offer a whole of it. pearson farms peaches, melted sweet grass dairy's green hill, basil and grain mustard on butter toasted bread. a "side salad" of heirloom tomatoes and green beans came along for the ride. normally i am an un-oaked chard kind of guy, never really been one for big over extracted malolactic fermentation bombs going off on my palate, but we served this course with a wine called "butter". unreal. use your imagination! this course is for my brother scott.next up, carbonara. housemade noodles coated in a rich egg yolk sauce, adorned with bacon, parmesan cheese, locally foraged chanterelle mushrooms, black pepper and arugula.
two repeat courses from our last dinner. first, the duck meatballs served with a lentil salad, tomato marmalade and sunflower sprouts.
...and while "dirty cookies" conjure up the image of a hand full of animal crackers pulled from a toddlers pocket after a hard run on the play ground, the picture below should put you at ease. housemade short breads stuffed with chocolate ganache and drizzled with caramel, chopped pecans and sea salt.
oh no, tin foil to-go animals!

tin foil tricks

if you can find them, sunflower sprouts make an amazing salad or garnish. crisp and full of flavor with a nutty finish. yum!
our vegetarian course for the night. eggplant caponata with hummus, edamame and cherry pepper salad, sandy springs feta and a fried padron pepper garnish. we served it with lavash and toasted h&f baguette toasts.
panzanella salad, point reyes blue cheese, micro watercress and crispy skin chicken thigh.housemade spicy berkshire pork sausage with salad of basil, red onion, parmesan and lucques olives and a red wine vinaigrette.
my favorite course of the evening, duck meatballs. roasted till brown and juicy, and propped on top of a bed of lentil salad with heirloom tomato marmalade and finished with mint."dirty cookies". shortbread cookies filled with chocolate ganache, then drizzled with caramel, pecans and sea salt. kinda hard not to get messy wit this one. gotta have some milk with these bad boys. come on harvey, you can do it!believe it! i was paying attention at my senior prom dinner at the chanteclair. aside from the table-side caesar salad, my leftover duck a l'orange stuffed into a foil bird shape was the highlight of the evening.

happy birthday jennifer conway

my new favorite veggie, padron peppers. tender and sweet, i ate about twenty before dinner. also pictured, of course... my takeda knife.

happy birthday jennifer conway! (pictured in the middle). jennifer and her husband ryan along with eight of their good friends joined us for dinner. my jen knows them first from seed factory (where she works) and became fast friends with both. ryan wanted to surprise jennifer with a staplehouse dinner... we were honored to host them all!
welcome back ben! ben has been hard at work with local three, but took some of his rare spare time to come help with a staplehouse dinner.
grilled spanish mackerel with spinach and local baby carrots, fried shallots and housemade tomato marmalade.
caramelized beans with tybee island shrimp, smoked/pickled shiitake mushrooms and sweet onion soubise.

dessert was cinnamon french toast with pearson farms peaches and vanilla bean cream.
thanks for sharing! ryan and jennifer brought a wonderful bottle of wine to share with us, delicious!
