july 29th 2012 dinner


while we may get another week or two of these beauties, we are coming up on the end of the first round of tomatoes for the summer. so we had to get our fix 'til they come back in a few weeks. heirloom tomato salad with housemade chive ricotta, pickled okra, wild baby greens and sherry vinaigrette.
masami ranch beef tartare with oil cured olives, quail egg, pickled leek stalk, lemon mayo and toasted baguette.
gulf grouper with creamed corn, roasted heirloom potatoes, bacon and padron peppers.
banana custard, honeysuckle's chocolate gelato, pie crust, and carmelized banana.

summer time tagliatelle

three courses this time starting with a farmers market salad. the best and brightest that our local farmers have to offer.  tossed with a red wine vinaigrette and set on a big fat tomato slice with a little sea salt and black pepper. the amazing red corn is a new one for us called crimson queen and was actually from south carolina, but was so nice we had to include it.
cucumbers, peas, green beans, arugula and basil pop with flavor, nice and light.
housemade tagliatelle with staplehouse ricotta, berkshire pork and grass fed beef meatballs for the main course. we made the sauce from lightly roasted milled tomatoes from around the block.
yellow watermelon with watermelon granita, figs, cilantro syrup, and opal basil.

last but not least... family meal! meatball subs hit the spot after a long weekend of dinners.

july 15th summer dinner

summer is in full swing, and so is the heat! as the temperature creeps up into the 90's we tend to do a few hot weather menus to cool things off a bit. 
chilled peach buttermilk soup with charred jalapeno and basil cream.
florida grouper with marinated ratatouille vegetables and georgia olive oil.
manchego sausages with sungold tomatoes, padron peppers and pickled leek stalks.
watermelon and ginger sorbet with carmelized figs, san juan melon and purple basil.
