STAPLEHOUSE small batch program

STAPLEHOUSE small batch is underway.
what is small batch?  STAPLEHOUSE small batch is a new program where STAPLEHOUSE produces limited quantity specialty items, such as soup, hot sauces, pickles, mustards and jams -- all made scratch from local product, and all first-come, first-served.  with each email we send, we list that weekends offering and provide all necessary details about suggested donation and such.
oh, wait.  there's more.  STAPLEHOUSE also offers free delivery to certain atlanta area neighborhoods, but you need to be on our email list to see where those are!  otherwise, picking up from our grant park home is the option.

to date, STAPLEHOUSE has offered a different small batch soup each weekend for the last 6 weeks. from roasted local chicken & dumplings to pork rib & udon noodle.  below was a bowl of our smoked berkshire pork & beans that hit the spot!  a huge hunk of warm corn bread, slathered with good butter softly nestled underneath the glory of pork & beans is magic.  truly magic.  all STAPLEHOUSE small batch soup is limited to 2 quarts per person or family.  1 quart equals 2 servings. all of our soups are labeled with hand written batch numbers.

happy birthday andy!

last weekend staplehouse hosted a surprise birthday dinner for our friends andy and erika, here are some shots of the night!



north georgia apples, shaved fennel, hazelnuts, goat cheese and grain mustard vinaigrette.

white bean puree with pickled chili and rosemary-garlic oil.
roasted hudson valley duck breast with sautee of smoked mushroom and parsnip, roasted grape and taragon salad and parsnip puree.
melt in your mouth short rib that we braised in red wine and soy sauce, lacinato kale ginger-potato carrot puree.
our melting ice cream sandwich. peanut butter cookie with peanut butter gelato from honeysuckle gelato and housemade brown turkey fig preserves.
a huge thank you especially to erika, jen's great friend AND hair stylist, for organizing this surprise birthday dinner for andy!



chomp & stomp 2011 62nd place chili

so our 2011 chomp & stomp chili didn't do as well as we had hoped. in fact, it placed well below our expectations... 62nd place to be exact! and though we have questions as to how the judging goes down we still had an amazing day filled with good friends, chili and beeeeeeer!

here are some photos of what went into the staplehouse smoked brisket chili.  toasted and fresh ground cumin and peppercorns, 5 types of dried chilis and four giant angus beef briskets. the rest is a staplehouse secret, but we can tell you that there was no tomato product and we slow cooked our chili for about 8 hours, layering the flavors throughout the process.

hard to tell from the picture, but we offered five different housemade hot sauces to self medicate and garnished the top of each serving with a tiny spoon of our pickled jalapeno relish.

a stop by the fox brothers chili stand to say hello to our dear friend luna and share a nip of bourbon.
great turn out this year, almost to good.  tons of chili eaters hit the park for some bluegrass before the chili results.
after a long day of scooping the last thing you want is a bowl of chili so greasy cheese burgers for all!
thanks again to all who helped out this year. regardless of the 62nd place, its still one of my favorite events in atlanta.  next year, chili gold!

chomp & stomp 2011

yes, fall is in the air!

the weather has taken a soft knee, the indianapolis colts have taken many painful snaps, and the jeans and fall attire replace flip flops and t-shirts (at least for a while).


one other thing happens...


Staplehouse competes in our third year of the cabbagetown chomp & stomp chili cook-off! we came out of the gates swinging our first year with a 7th place brisket chili out of 130 teams. year two, well, lets just say we vowed never to enter that - *%^!!?*% @$# - cook-off again, ahem! (26th place), BUT! as the season comes back around, we have found new passion and excitement has filled our spirit and we are ready to rock! year three is the year we bring home solid chili gold.


this is my favorite event of the year, college football in the background, arts and crafts, great food and live music all tucked into cozy little cabbagetown park. we encourage all to join with us this year, as we will be scooping this magic mix of brisket and ground chilies from heaven. who wouldn't want to be a part of this ?!


so, if anyone feels that what they are missing in their life is a warm cider and bourbon in one hand and a fresh krispy cream doughnut in the other, as the sun rises up over a steaming cauldron of spicy chili, well then, you know what to do.


any and all are welcome to visit cabbagetown park this year (no dogs though). the event is tomorrow, november 5th. chili tends to go fast, very fast!
