sunday dinner 5/20/12

we always hit the grant park farmers market the day of our dinners to look for some last minute goodies. this week we discovered these leek flowers.  a long hollow stalk with a bulb of flowers on top. it looks a little like a prehistoric chive and tastes great. we used the flowers to garnish a dish and then sliced the stalk and pickled it for a later garnish.

green garlic and garlic scapes are thinning out, and if you haven't used them, you are missing out on one of our favorite spring ingredients.

we start this weeks dinner with chicken liver pate, small batch kumquat marmalade, radish salad and grilled h&f bread.

next up, korean shrimp cocktail of tybee island shrimp, housemade kimchi, and wonton.

for the main course we prepared seared cobia with love is love green beans and shaved fennel, grape tomatoes, bacon, basil and BLT sauce.

and we finished up with basil cake, pearson farms peaches and soft whipped cream.

april 2012 dinner

dinner from last month! we started with a salad of belgium endive, fava beans, basil, citrus and parmesan.
a refreshing shot of chilled asparagus soup with housemade sour cream and locally foraged pickled ramps. 
next up buffalo mozzarella with grilled garden salsa and toasted bread.  we used local carrots, fennel, tomatoes and fiddlehead ferns.

the entree course was joyce foods cornish hen with peas radishes and spinach, horseradish butter emulsion and hen thigh croquette.
sweet local strawberries and soft, warm cream biscuit with fresh basil for dessert.

lettuce, turnip, beet - georgia organics 2012

last month staplehouse was invited to take part in a georgia organics event, "lettuce, turnip, (the) beet" at sweetwater brewey.  jen, ben and i roasted a whole hog from thompson farms and made lettuce wraps with local garden salsa and pickled ramps. we had such a great time and always enjoy working with our dear friend steven satterfield of miller union. staplehouse is a big supporter of our local farmers market and we are lucky to have so many amazing farmers to work with!
